1 ripe, soft avocado
1 spring onion, chopped
1 large clove garlic, crushed
1 ripe tomato, chopped

a small handful of fresh coriander, chopped
juice of 1/2 a lime (or a small squeeze of lemon if you haven’t any limes)
freshly ground black pepper

fresh chilli, chopped, optional

Mash the avocado. Add the rest of the ingredients and mix well. Add black pepper to taste. If you fancy a bit of a kick, add some freshly chopped chilli.


  • I find that this recipe doesn’t require any salt.
  • To keep it fresh, bury the avocado stone in the guacamole and put into the fridge until you need it.
