Lemon and ginger flapjacks

Ingredients:
350g oats
200g marg
200g honey
2 tbsp fresh ginger, chopped
juice and zest of 1 lemon
about 2 tbsp apple or other fruit juice

Preparation:
Pre-heat the oven to 200. In a large pan, heat all the ingredients together very gently, stirring constantly so nothing burns or sticks. When the marg is melted and everything is combined nicely, spread into a small baking dish lined with baking parchment (the mixture should be about an inch thick). Bake for about 25 minutes. Cool on a wire rack.

Alternatives:
Bakewell flapjacks ~ Instead of lemon and ginger, add about 1tsp of almond essence or vanilla essence, 50g crushed almonds, 100g glacier cherries and 25g extra marg.
Cashew and sunflower seed ~ Replace the lemon and ginger with 100g cashew nuts, 50g sunflower seeds, 50g extra honey and 25g extra marg.
